Offering an array of traditional Umbrian and Tuscan dishes, Restaurant Dolium prides itself on using only the finest local produce. Led by Matteo Ragni, our passionate chefs adopt seasonal variations of recipes throughout the year. Special attention is paid to guests’ dietary needs, and dishes can be tailored to be suitable for vegetarians and allergy sufferers. A children’s menu is also available for our younger diners. In the summer months, guests can enjoy access to our terrace; which offers stunning views. In this space, you can enjoy alfresco dining as well as aperitifs from our bar.
Umbrian cuisine can be described as wonderfully rustic and focused on freshness, flavour and simplicity. Many local dishes rely heavily on fresh produce that is grown in the region’s rich soil, lakes and forests.
These ingredients include mushrooms, truffles and flavourful olive oil. Villa Monte Solare itself produces prized olive oil that guests can sample and purchase.
Antipasti recipes are popular in Umbria, as is pasta. One of the best-known Umbrian pasta dishes is strangozzi, which is typically served with truffle. Other regional pasta dishes include strigoli, ravioli and succulent Florentine steak.
The region is also famous for its chocolate and delicious cheeses; such as ricotta, pecorino and even spiced and truffle-infused varieties.

We offer classes at our cosy "La Capannina" cooking school, every Monday, Wednesday and Friday with prior reservation. Topics include “famous Italian dishes", "seasonal specialities" and "quintessential Umbria-Tuscan cuisine".
